Golden Beef and Mushroom Pie

Ingredients

• 900 g beef chuck(cut into small cubes)
• 250 g mushrooms(quartered)
• 1 piece onion(diced)
• 30 ml plain flour
• 30 ml neutral oil
• 600 ml beef stock
• 5 ml dried thyme
• 320 g puff pastry(thawed)
• 1 piece egg(beaten)
• 5 ml salt

Method

1. Heat oil in a Dutch oven; season beef with salt, brown in batches and set aside. [10 min]
2. Cook onion and mushrooms, stir in flour and thyme, then gradually add stock. [10 min]
3. Return beef, cover and simmer gently until tender; stir occasionally and add water if needed. [1 h 30 min]
4. Transfer filling to a pie dish and let it stop steaming while heating the oven to 200 C.
5. Cover with pastry, trim and crimp the edges, cut a steam slit and brush with beaten egg.
6. Bake until the pastry is golden and the filling bubbles; rest for five minutes before serving. [200°C · 30 min]
